This is a plant based mediterranean influenced lunch that is going to bring a lot of flavor, texture, and color to your day.
You will be making and combining the following:
Balsamic Spinach and Arugula
Turmeric and Broccoli Fried Rice
Spicy Lentils
Vinegar soaked Red Cabbage and Red Onions
Homemade Toum
Store-bought Red Pepper Hummus
Ingredients
Balsamic Spinach and Arugula Base
Baby Spinach
Arugula
Balsamic Vinegar
Turmeric and Broccoli Fried Rice
Broccoli
Rice
Olive oil
Spicy Lentils
Lentils
Vegetable Stock
1/2 red onion
3 cloves of garlic
Vinegar soaked Red Cabbage and Red Onions
Red Cabbage
1/2 red onion
3 cloves garlic
White distilled vinegar
Homemade Toum (Blender or Food Processor Required)
1/2 - 1 head of garlic
1 lemon
Olive oil
Store-bought hummus of your choosing
Seasonings:
Chili powder
Cumin
Paprika
Cayenne pepper
Red Chili Flakes
Turmeric
Ground Ginger
Kosher Salt
Instructions
Please follow the step by step instructions below for the most timely and effective results.
Rinse your rice and lentils at least 3 times.
Fill a pot of rice with water. The waterline should be a fingernail's length above your rice. Bring it to a boil. Then let it simmer for 40 minutes.
Dice 1 large red onion and mince 1 head of garlic.
Bring a pot of half vegetable stock and water to a boil. Throw your Lentils, 1/2 of your onion, roughly 3 cloves of minced garlic into the boil.
Season the Lentil Mix:
2 tablespoons of chili powder
1 tablespoon of cumin
1 tablespoon of paprika
1/2 tablespoon of turmeric
powdered cayenne pepper to spice preference
red chili flakes to spice preference
2 pinches of kosher salt
Let it simmer for 30 minutes
Chop 1/4 of a Red Cabbage and put it into a bowl - along with the other 1/2 of your red onion and roughly 3 cloves of minced garlic. Fill 1/2 of the bowl with white distilled vinegar and the other 1/2 with water. Leave this mixture soaking until the end.
Use the rest of your garlic and put it in either a blender or a food processor. Squeeze 1 lemon into the garlic, add 2 tablespoons of olive oil, and 1-2 pinches of kosher salt. Now blend or process until it is a hummus like consistency. Add more olive oil as needed.
Heat a pan with olive oil to a medium heat level.
Rinse and chop broccoli into bite size pieces and throw into the heated pan. Add 1 tablespoon of turmeric, 1 tablespoon of ground ginger, and 1-2 pinches of kosher salt. Add Rice and stir until it all has a yellow color.
Rinse your arugula and baby spinach. Lay the greens at the bottom of your serving bowl and add 1 tablespoon of balsamic vinegar.
Assemble!
Add your turmeric broccoli fried rice onto the top of your balsamic greens.
Then add your spicy lentil mix.
Top it off with 1 scoop of your "pickled" cabbage, homemade toum, and store-bought hummus.
You should now how a flavor, texture, and a color blast in a bowl. I also hope you have a smile on your face. These items are also highly effective in other combinations and dishes, so keep them under your belt.
